Saint Mary’s University organized a seven-day International Culinary Arts Training for HRM faculty and students, hotel cooks and owners on April 5,6,7,13, 14, 15, and 16, 2009. The trainers were Chef Jan Marc Van Der Borght and his wife Dymphna Van Der Borght of the Belgian Hotel/school Spermalie, Bruges, Belgium. Chef Jan Marc Van Der Borght is one of the most respected and brilliant chefs of the said hotel school. He was born in 1956 and had obtained his primary education in Kortrijk, Belgium; his secondary education in Oostende. He went to Hotellere School after high school for a course in Cooking. After college, he underwent training in Le Norte, famous in the world for its pastry and chocolates. Chef Marc is happily married to Dymphna and they are blessed with three children. Spermalie is one of the well known Culinary Schools found in the world that trains excellent chefs. Its Director is Mr. Filiep Defraye.

 

The abovementioned training was granted to a selected few coming from the academe and the industry. It was partly subsidized by Saint Mary’s University and TESDA. Rev. Gerry Bouckaert, CICM, former SMU Chaplain and Head of the Theophile Department, was responsible for inviting the trainers at SMU. In order to test the competence and proficiency of the trainees, the training culminated in a fine dining activity attended by some prominent guests in the locality on April 15, 2009. During the fine dining activity, the SMU Chorale entertained the guests with their beautiful songs. The trainees prepared the food and waited for the guests.

On April 16, 2009, last day of the training, all the participants were given certificates of completion issued by Spermalie and SMU.
